– 2 tablespoons of fried shallots
– 1 tablespoon of fish sauce

Method:

1. Heat oil in a pan and add the tea leaves, ginger and garlic to it. Fry the ingredients for 1-2 minutes on medium heat until the aroma of the tea leaves is released.

2. Add jaggery, sesame seeds, peanuts, shallots, fish sauce and chilli flakes to the pan and mix well. Continue cooking for another 3-4 minutes.

3. Remove pan from heat and stir in the lime juice, cilantro and a pinch of salt. Allow the mixture to cool.

4. Assemble your salad and top it with the tea leaf mixture. Enjoy!
