Ruby Tuesday Pasta Salad – A Delicious Fusion of Sweet and Savoury
My kitchen is rarely without Ruby Tuesday pasta salad. Its delicious combination of sweet and savoury flavours is truly unique, and its fusion of European, African, and American influences makes for a truly special culinary experience. Don’t just take my word for it – the proof is in the pudding, or in this case, the pasta!
The key to this salad lies in the mix of colourful ingredients. Most notably, red and yellow bell peppers, onions, and ripe tomatoes; a rainbow of cruciferous veggies; and a variety of rich, nutty seeds and spices. When all combined, they create a scrumptious medley of textures and tastes.
Ingredients:
-1 lb. small pasta of your choice
-1½ cups cooked chicken breasts, diced
-1 red bell pepper, diced
-1 yellow bell pepper, diced
-1 small onion, diced
-1 cup cooked broccoli, chopped
-1 cup cooked cauliflower, chopped
-1 cup cooked carrots, chopped
-1 cup cooked bacon, diced
-1 cup sunflower seeds
-1/3 cup olive oil
-2 tablespoons white wine vinegar
-2 tablespoons Dijon mustard
-Salt and pepper to taste
Instructions:
1. Cook the pasta according to the directions on the package and let cool.
2. In a large bowl, combine the chicken, bell peppers, onion, broccoli, cauliflower, carrots, bacon, and sunflower seeds.
3. In a small bowl, whisk together the olive oil, vinegar, mustard, and salt and pepper to taste.
4. Add the cooled pasta to the vegetable mixture, pour in the dressing, and toss to combine.
5. Cover and chill in the refrigerator until ready to serve. Enjoy!
