2. Meanwhile, cook the bacon in a large skillet over medium heat until crisp. Reserve the bacon grease, remove the bacon pieces, and set aside.
3. In the same skillet, sauté the onion, celery and green bell pepper in the bacon grease until tender, about 7 minutes.
4. In a large bowl, combine the potatoes, bacon, vegetables, parsley, mayonnaise, vinegar, sugar, salt and pepper. Mix until everything is evenly coated.
5. Serve the potato salad immediately, or chill for a few hours before serving for the best flavor. Enjoy!
