-1 large bunch kale, washed and de-stemmed

-1 red bell pepper, thinly sliced
-1 orange bell pepper, thinly sliced
-1 yellow bell pepper, thinly sliced
-1 red onion, thinly sliced
-4 cloves garlic, minced
-1 cup cherry tomatoes, halved
-1 cup toasted nuts (such as almonds, walnuts or pecans)
-2-3 avocados, peeled, pitted and diced

Avocado Lime Dressing

-3 tablespoons olive oil
-1 teaspoon honey
-Juice of 1 lime
-1 teaspoons cumin
-½ teaspoon garlic powder
-¼ teaspoon smoked paprika
-¼ teaspoon sea salt

Instructions

1. Preheat oven to 400°F.
2. Line a baking sheet with parchment paper and set aside.
3. In a small bowl, whisk together all the ingredients for the kale coating.
4. Place the kale in a large bowl and toss with the prepared coating.
5. Gently spread the kale onto the prepared baking sheet and bake for 8-10 minutes, or until crisp and lightly golden.
6. In a separate large bowl, toss together the bell peppers, onion, garlic and tomatoes.
7. Once the kale is done baking, add it to the bowl with the vegetables and toss to combine.
8. Place the bowl in the refrigerator to chill for 10-15 minutes.
9. Meanwhile, in a medium bowl, whisk together the ingredients for the dressing.
10. Remove the salad from the refrigerator and top with nuts and diced avocados.
11. Drizzle the salad with the prepared dressing, and optionally add a pinch of sea salt if desired.
