– 2 heads of fresh iceberg lettuce, chopped
– 1/2 cup freshly grated Parmesan cheese
– Salt and pepper, to taste


– 2 tablespoons red wine vinegar
– 2 tablespoons white balsamic vinegar
– 1 tablespoon Dijon mustard
– 1 tablespoon honey
– 1 garlic clove, minced
– 1/2 cup extra-virgin olive oil
– Salt and freshly ground black pepper, to taste


– 1/2 cup mayonnaise


To make the vinaigrette:

In a small bowl, whisk together the red wine vinegar, white balsamic vinegar, Dijon mustard, honey, garlic, olive oil, salt and pepper until emulsified. Set aside.

To assemble the salad:

In a large bowl, combine the chopped lettuce, Parmesan cheese, and salt and pepper. Drizzle the vinaigrette over the top and toss to combine.

Add the mayonnaise to the salad and toss to combine. Taste and adjust seasoning if necessary.

To serve:

Divide the salad among individual plates and serve immediately. Enjoy!
