• 3 cups cooked black beans
• 1 cooked chorizo sausage, diced

• 1 cup fresh pineapple, diced

• 1/2 cup cotija cheese, crumbled
• 1/2 cup sliced black olives
• 3 tablespoons olive oil
• 1 tablespoon lemon juice
• 1 teaspoon cumin
• 1 teaspoon chili powder
• Salt and pepper to taste

Method for Fiesta Salad:

1. Heat olive oil in a large skillet over medium heat.
2. Add the chorizo and cook, stirring often, until lightly browned, 4-5 minutes.
3. Remove from heat and add the cooked black beans, bell pepper, rice, pineapple, red onions, cotija cheese and half of the black olives. Stir until combined.
4. In a medium bowl, whisk together olive oil, lemon juice, cumin and chili powder.
5. Simmer the dressing over low heat for 2-3 minutes, then remove from heat and let cool slightly.
6. Pour the dressing over the Fiesta Salad and season with salt and pepper to taste.
7. Transfer the Fiesta Salad to a serving dish and sprinkle the remaining black olives over the top.
