– Lettuce mix (romaine and iceberg blend)
– 8 cherry tomatoes, quartered
– 1 small jalapeno, sliced (optional)
– 1 avocado, sliced
– 1/3 cup sour cream
– Juice of 1 lime


1. Preheat a large skillet over medium-high heat.
2. In a medium bowl, whisk together the olive oil, garlic, chili powder, ground cumin, paprika, smoked paprika, garlic powder, dried oregano, salt, and pepper. Set aside.
3. Add the chicken strips to the preheated skillet and cook for 6-7 minutes per side or until the chicken is cooked through.
4. Reduce the heat to medium and add the bell peppers and onions to the skillet. Cook for 5 minutes or until they begin to soften.
5. Stir in the reserved fajita marinade, stirring continuously until the vegetables are evenly coated and the marinade is thick.
6. In a large bowl, combine the lettuce mix, tomatoes, jalapenos, avocado, and cooked chicken and vegetable mixture.
7. In a small bowl, whisk together the sour cream and lime juice. Spoon the mixture over the salad and mix to combine.
8. Serve the salad immediately and enjoy!
