Welcome to my kitchen! Today I’m sharing a delicious recipe for Bocconcini Salad, a perfect dish for a summer lunch or dinner.

This divine salad is bursting with flavors, from the bright, tangy tomato and fragrant basil, to the creaminess of bocconcini, a fresh Italian cheese. It’s such a simple dish, but surprisingly packed with nutrition and a variety of exciting tastes and textures.

Ingredients:

• 12-15 cherry tomatoes, sliced in half
• 2 tablespoons extra virgin olive oil
• 2 tablespoons white balsamic vinegar
• 1/4 cup fresh basil leaves, chopped
• 1/4 teaspoon salt
• 1/8 teaspoon freshly ground black pepper
• 8 ounces bocconcini cheese, sliced

Method:

1. In a medium bowl, whisk together the olive oil, white balsamic vinegar, basil, salt and black pepper until ingredients are well combined.

2. Add the cherry tomatoes and bocconcini slices to the bowl and gently toss to coat with the vinaigrette.

3. Plate the salad and enjoy!
