- 1/2 cup of chickpea (dried and cooked or canned)
- 4 pieces of dried tomatoes, sliced
- 1/2 mango, peeled and cubed
- 2 lettuce leaves, torn
- couple of basil leaves
- 1/3 of lemon, juice only
- 1 tea spoon of oil from tomatoes
- 1 tea spoon of honey
- pinch of ground cumin
- Mix top five ingredients in a bowl.
- Mix remaining dressing ingredients and pour over salad.
